Reminder emails are sent by Centime (admin@centime.com). You are not cc'd in reminder emails. However, you can go to Settings, Receivables, and General Settings to enter in a Sender Profile for reminder emails. This profile name will be used as a vanity name for admin@centime.com and the email address in the Sender Profile will be where any customer responses are sent to.
